Baigan Fry

  • 1 big Brinjal
  • 1/4 tsp Turmeric
  • 1 tsp Red Chilly Powder
  • 1/2 tsp Dry Mango Powder (Aamchur)
  • 1/2 tsp Roasted Cumin Powder (Optional)
  • 1 tbsp Wheat Flour
  • 1 tbsp Rice Flour (Optional)
  • Salt to taste
  • Oil for shallow frying (About 4 tbsp)


Step 1

Pre-Prep: Cut the Brinjal into slices of about 1/4 th inches thickness

Step 2

Sprinkle turmeric and salt on both site of each slice and leave it for 10 mins

Step 3

Remove the excess liberated water from the slices

Step 4

Now sprinkle the other remaining dry ingredients (chilly powder, dry mango powder, cumin powder, wheat flour and rice flour) over the slices on both sides

Step 5

Cooking Heat up oil in the frying pan for shallow frying

Step 6

Place the slices on the pan such that each slice come in contact with pan

Step 7

Fry it both side till the brinjal slices are cooked properly and turns crispy

Step 8

Serve it hot with garnish of chat masala sprinkled over it.
